You're certainly willing to spend money. If this is a gaming computer, you're not getting much value out of it.

RAID 0 has very little impact on performance, especially with only two disks and run on an integrated controller.

this will be my home workstation for the next few years to do photo and video editing and a little bit of gaming every now and then

Have you done any research on the performance difference between Core2 and Core i7 in the applications you use?
