cooks: how many times can you re-use frying oil?

Topic says it all - how many times can you re-use oil that was used for frying? Usually you need a good amount of oil to fry but it seems to be a waste to fry it once and toss it away. I've heard that the oil composition changes as you use and re-use and re-use the oil ... any truth in that? Tried snopes but found nothing ...

If it's liquid and doesn't smell like ass, you are good to go.

Pretty much forever...

If you're using it for the exact same thing I'd say a couple of times. I would try if if you're mixing foods that you're frying. You'll carry over flavors that may not work well together.

good point

If it is a fry guy or something that you use just for french fries, they will taste better and better the more you use the oil. After about 8 years, you will finally get to the taste of a McDonalds French Fry...

Err, I believe they dump the oil every day.

No, it's filtered every day, and changed every week. Those things hold about 4 gallons each. With 7 or 8 vats, that would be 960 gallons of oil per month per store.

Use the oil until it:

-Turns opaque
-Starts to smoke
-Is raised above 450°F

If any of those three things happen, it's time to get new oil.
