So I'm making Chipotle Shrimp Cups...here is the recipe:

3 dozen won ton wraps
1 cup cooked peeled and coarsely chopped shrimp
1 cup roasted chopped red pepper, drained
1 cup chipotle salsa
1 1/2 cups shredded Monterey Jack cheese
1/2 cup sliced green onions

Preheat oven to 350 degrees. Coat mini muffin pan with nonstick cooking spray and press a won ton wrap into each cup. Bake about 7 to 9 minutes or until golden brown.
Meanwhile, in a bowl, combine the cheese, shrimp, roasted red peppers, salsa, and green onions. Remove the cooked won tons, fill each with some of the shrimp mixture and conitnue baking 8 to 10 minutes or until cheese is melted.
Makes 36 cups

Anyways, I couldn't find chipotle salsa....but i found RASBERRY chipotle salsa...do you think it's ok to use this instead? or is it really weird????????

I wouldn't use it....but I'm not a big raspberry fan, and I think it would be too sweet anyways.

You should be able to find canned chipotle peppers though, they're available everywhere. Make your own salsa with a chopped tomato, onion, habanero pepper, chipotle pepper, a little cilantro and lime. Or buy some regular old salsa and add some chopped up chipotle peppers.

Would you like rasberry shrimp?? I don't think the flavors would go well together. How sweet is the salsa?

yeah..rasberry shrimp does not sound appetizing 🙁

i haven't tried the salsa yet...

and that's a good idea..make my own salsa! but i dont think i have time.

i actually have chipotle SAUCE..so maybe i will just use that isntead...but i think sauce is different from salsa. bahhh! i dont have regular salsa either. arghh.

Taste the salsa and see how sweet it is. You MAY be able to get by with combining the salsa with the chipotle sauce to kinda dull down the rasberry but you need to retain the texture of the salsa.

oooh good idea! i'll try that. thanks.

Mix up a small amount and dip a peice of shrimp in it to taste it, if you think it mixes well with plain boiled shrimp (which don't really have a whole lot of flavor) then you are in business. If not, then you're back at square one.
