Cooking a Beef Roast

So I got this 3 1/2 lb beef roast sitting in my fridge. I picked it up because it was on sale...

Now, how do I roast this sucker?

I remember watching an Good Eats episode in which the gist of the advice was to first cook the roast at a low temperature and then towards the end, crank on the heat to brown the outside.

However, all the instructions I found on the web states the opposite.

Also, I want to put in potatoes and onions (my only veggies), do I put them in when the roast is halfway cooking? I doubt they can last the whole 3+ hrs in the oven.

Plus, I figure that I just need to rub salt and pepper, correct?

you wanna make a stew or no?

best way is to sear the roast ina pan before you roast it, it seals in teh flavors and juices

if you roast it put the veggies in like 30-45 min before its done, depending on how long they need to cook

well.. it isn't a pot roast or stew. Nothing with it cooking in liquid.

I was thinking of just roasting the beef in a roasting pan. Just would like to know the proper times, etc...

Like, it is advisable to cook it at low heat and then high heat right?

Damn, I could go with a nice roast beef sandwich with provologn on sourdough with brussel sprouts and tomatos.
