Cooked some awsome T-bones on Sunday

try this

Get a bunch of t-bones

Generously sprinkle dry yellow mustard on both sides
Salt and pepper to taste on both sides
And the secret ingredient....
Liberally slosh on Tabasco sauce on both sides

Mash it in with a fork and slap on a blazing hot grill.


ummmm very tasty, even my kids wanted more but ran out of cow.

Your ruining a perfectly good steak with all that crap.. :p Steak is supposed to taste like steak, not seasoning.. Eat a cheap sirloin if your gonna add everything to eat.. Its all gonna taste the same.

Well that does it... i was going to throw some chicken in buttermilk then deep fry them tonight, but looks like i'm going for a t-bone steak.

I agree, most of the time the steak is grilled naked but i wanted something different on Sunday. The flavors wernt overpowering and very suttle but you could tell there was a hint of something different about it. Very tasty i suggest you try it just once.

Any other recipies for steak (non-spicy)? I'm thinking of cooking dinner for my fiance; she's not having a good week. = )

mmm....just had some of granny's buttermilk fried chicken over the weekend.

Just buy quality steaks and you won't need to deal with a recipe. Just salt and pepper it, then grill it.

It wasnt spicy at all, but added a very very faint pepper flavor.

Marinate them with melted butter... Your arteries harden just looking @ them.

Another trick is to sear them on the grill, then finish cooking them in the oven for 15-20 min on 450-500 degrees-that way they're done & not burned...

I soak t-bones in lemon juice for about 3 minutes while fork proding to tenderize, and then baste in butter while grilling over hickory cihps. Doesn't need any other seasoning, very tender and flavorful. The butter absorbs the hickory flavor in to the meat too. Mmmmmm.

If it's a cheap steak, then I marinate it in beer and worchestershire for several hours and then grill. A1 is A okay.

With better steaks, it's not advisable to pierce the meat before or while coooking... piercing can really lead to less juicy/moist meat.

Sometimes crapier steaks need to be pierced repeadly with a tenderizer... but not stuff like T-bones.

This is a huge hit everytime I grill it. For those purist's who say steak should taste like steak I urge you to try this. There is room on my palate for both, hopefully yours as well.
If you are going to grill... anything... use a chimney starter, Lump charcoal (not briquettes), and some hardwood smoking chips. It makes a world of difference. You don't need a fancy grill the Weber Kettle's are superb.

GRILLED PORTERHOUSE STEAK WITH PAPRIKA-PARMESAN BUTTER

1 2 3/4- to 3-inch-thick porterhouse steak (about 2 3/4 pounds)
1/4 cup olive oil
7 large garlic cloves, minced
1 tablespoon chopped fresh thyme
1 tablespoon salt
2 teaspoons ground black pepper
1 teaspoon chopped fresh rosemary

Paprika-Parmesan Butter

3 tablespoons butter, room temperature
2 teaspoons grated Parmesan cheese
1 drained anchovy fillet, minced
1 teaspoon paprika
1/2 teaspoon Dijon mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon ground black pepper
1/4 teaspoon hot pepper sauce

Mix all ingredients in small bowl until blended. (Can be made 2 days ahead. Chill. Use at room temperature.)

Makes about 1/4 cup


Place steak in glass baking dish. Whisk oil and next 5 ingredients in small bowl to blend. Pour half of marinade over steak. Turn steak over; pour remaining marinade over steak. Cover and chill at least 2 hours and up to 1 day, turning occasionally.

Prepare barbecue (medium heat). Remove steak from marinade; shake off excess. Place steak on barbecue; cover barbecue. Grill steak to desired doneness (until instant-read thermometer inserted into center of steak registers 115°F to 120°F for rare, about 15 minutes per side, or 125°F to 130°F for medium-rare, about 18 minutes per side), occasionally moving steak to cooler part of rack if burning. Transfer steak to platter; cover to keep warm. Let stand 5 minutes. Using sharp knife, cut meat away from bone. Cut each meat section into 1/3-inch-thick slices. Spread Paprika-Parmesan Butter over top of slices and serve.

How do you know the difference in quality between good vs. bad steak while at the grocery store? Do you rely on cost? amount of fat? brand?

I prefer HP Sauce. It kicks A-1's butt.
