Cooked a 5lb Eye Of Round Roast Today

I used my crockpot to cook a 5lb eye of round roast. I added Yukon Gold potatoes, carrots and vidalia onions.

for seasonings I used pepper, salt, Italian Spice (7 herbs) and minced garlic. I added 1 can of cream of mushroom soup with 3 cups of water.

cooked on low for 10 hours.

eye of round is one of the toughest cuts of beef due to a lack of marbling.

After 10 hours this roast is very tender and quite delicious. Finally a home cooked meal that is really satisfying and comforting. I am in heaven.

It's great comfort food, we do it now and then. I even like sticking a London Broil in a crockpot occasionally. ()🙂

Have a pork roast I'm going to stick on the rotisserie tomorrow, it came out great last time.

You made me think of meatloaf, mentioned it to the wife, she has become the meatloaf/rib expert in our house over the years.

I keep her away from steaks 🙂

did you completely submerge the roast in your liquid? I'm always curious what works best...I like to place the roast on carrots and potatoes then submerge halfway in liquid....I've had great and not so great results this way

I guess it would depend on the size of your roast and crockpot.

I have a 6 quart crockpot. This roast barely fit. There was enough room for 3 large cut up potatoes and 1/2 a cut up onion. I sprinkled a handful of baby carrots.

I usually put veggies in first and then the roast but sometimes that won't work.

Most roasts contain a fair amount of water so you must take that into account when adding liquid.

Mine cooked with a final liquid level just shy of covering the roast.
 
How do you do this? Any time I do a roast I end up with under done potatoes and way over done meat. 10 hours would make shoe leather in my crock, but the potatoes would be done.

perhaps it's the cut of meat?

mine turned out frickin amazing! you can cut the meat with a fork and, as the pic shows, my potatoes still hold their shape while being quite tender.
 
Since it hasn't been brought up yet ... I'll be the first. Was the roast alternator sized?
 
My wife does a great eye round in about two hours in a roaster pan. Sear at 500 for 15 minutes then down to 325 until it hits 155-ish in the center. It's certainly a tougher cut, but I am not sure it needs 10 hours in a crock pot. Bet it was tender though!

10 hours on low works best with large tough cuts of beef.

yeah, it was so tender you could cut it with a fork.

My husband uses our crockpot a lot, tons of delicious meals!

I love my crockpot especially for that comfort food cooking.
