My parents converted some of their tapes over to 8MM (Sony Camcorder) format quite a few years back. Basically, my dad bought this L Shaped box thing that has a Screen in the middle. (Was a pretty cheap quality plastic thing and he got it at service merchandise I think, they probably still sell them at camera shops). The projector is placed at one end and you aim it at the internal screen. The camcorder goes at the other end and records the picture on the internal screen.
Most of the tapes didn't have sound, but, you could possibly connect a line out from the projector to the audio in of the camcorder or you could just leave it in a quiet room and get that clacking noise of the projector for the authentic old-time quality.
Overall, the transfer was pretty good. We had to actually rent the projector because the one we had was broken and we couldn't find parts for it anymore. The transfer from Camcorder (8mm) to VHS wasn't as pretty... it got all washed out looking at that point.
I'd suggest transferring to a HQ camcorder format like Digital and then saving that output (firewire) to a CDROM or 2 or 3, etc. Odds are you'll have to reconvert from the camcorder to another format in a few years, as they keep changing too.
