Just wondering if it's possible for me to leave my PC online at home via 56K connection and have something like PC anywhere running on it. Then when I get to work I could access the PC remotely.

Is this possible? Has anyone done anything like this?

I guess the weak point is that the Pc at home would be on 56K rather than a set IP.

Any ideas?

Make sure the pc is set up with some kind of keepalive for the connection, and if needed a dynamic dns client. Also, on 56K, PC Anywhere or VNC will be very, very slow... Depending on what you're doing, you might prefer to run an ssh server (preferably if you have a Linux/BSD box running at home). The (unix) command line's incredibly useful if you know how to use it, and the bandwidth won't kill you.
