Connecting old systems to new tv's

What's the recommended way of connecting NES, SNES, and N64 to newer tv's?

Also, is there anyway to get the yellow off the plastic?

Modern TVs still have the old fashioned yellow composition input. It just takes a lot of turning off of the junk processing off modern TVs to get them to look decent. All other options to modernize the output require money either to mod the console or buy a good video digital upscaler, often a FrameMeister.

Getting the yellow off is just slathering a type of peroxide the same ones used for activating hair color and lots of sun or UV light from a bulb. Both stuff any person can buy from a beauty salon and Home Depot. "The 8-bit guy" off YouTube got a great video about it.

I think I want to mod the consoles. So what products are the most popular/recommended for modding those 3 consoles?

NES - composite video (yellow) and audio.

Some new HDTVs don't have a dedicated composite connection, but they let you connect your yellow composite cable to the green connector from the component video input (green, blue, red connections). Some TVs don't even have component without a little squid cable that goes into a 3.5mm jack.

SNES/N64 support S-video natively. If your TV has that, make sure you get a quality S-video cable. The ones that have a composite video connection (yellow) on the same cable are pretty much all garbage. They just send the regular composite video (chroma+luma) signal to both the chroma and luma pins (the point of S-video is to keep those signals separate).

My brother @CZroe has installed the Hi-Def NES HDMI mod and UltraHDMI for N64. It's awesome.

We still have a extra boards for each mod to install.

Are those pretty easy to install? I know how to solder.
Both can be pretty difficult, depending on your equipment and skill level.

The NES mod is much easier if you have a desoldering workstation like CZroe has. The braided solder wick or spring-loaded pump thing doesn't cut it.

The N64 mod is more about skill / technique than equipment.
