I just had chicken congee and it is damn good.

1 Chicken simmered for 3 hours, deboned after boiling time, and it produced about 3L of broth/meat.
1 onion diced.
2 cups of garlic/ginger/lemon grass water (steeped).
1 cup of rice.

Add content into a pot and simmered for 2 hours.

Sever with fresh cilantro.
