Confused with how time is kept in *Nix

So i installed freebsd 6.1 and it's been 2 yrs since I've done an installation. My 4.11 has been working for over 2 yrs now. I went to compile the kernel and I keep getting errors. Various articles I came across said it had to do with how i set my time. I'm confused, do I use "local time" or UTC? What the hell is the difference between the two?!
 
It depends on what your hardware clock is set to, most PCs are set to local time. UTC is the same as GMT, if the box just runs a form of unix you can safely set the system clock to that if you really want but it shouldn't matter either way as long as you tell the OS which you're using.
