I've got the following components to use for a dedicated NAS box. I will need the data on this NAS to be accessed by multiple Virtual Machines (one that will be serving up media files stored on this box constantly).

I have licensing for ESXi 5.1 so that's an option to run VM's inside of on this server. Looking for suggestions for how best to configure this storage box. Data redundancy is very important as I care a lot more about not losing my data than I do about space.
Components:
- Intel Q6600 CPU
- DFI Blood Iron LGA 775 board
- 8GB DDR2-667 RAM
- Perc 6i RAID controller
- 8x2TB Hitachi Deskstar 7k3000 Sata 6.0 drives
- 160GB SATA 3.0 drive
- 16GB Micro Flash Drive (for installing ESXi if I go that route)
