Suppose I wanted to be able to surf the net without fear of having someone know what websites I've visited, how would I be able to do this? I'm familiar with proxy servers and services that post proxys, but there are many stealth proxies set up by the FBI or some other investigatory body that you may be putting yourself more directly into someone's scrutiny than if you did nothing at all. While I don't plan on doing anything illegal, I want my privacy!

I know its frowned upon...

ssh tunnel to a host you know you can dispose of with an internal IP that isn't logged when its translated and then bounce another tunnel to another box that isn't logged.

But then again if you can do that you wouldn't be asking.

If you've got a USB drive, install FireFox on it, then just run FireFox from the drive every time you wanna surf the net. Read that in Maximum PC, definitely gonna do it from now on when I'm on trips.
