Computer boots up so fast I can't see BIOS info

I've got this board coupled with an AMD 5400+ X2. I've got it OC'd easily to 3.2ghz (though I'm not sure if the temp readings are correct, they vary from 18C to 26C on max load according to core temp and hwmonitor.

Now i'm trying to OC my RAM from 800 to 1066, but I have two problems

A: I can't find any RAM options on the mobo. This was a piece of cake on my C2D machine (GA-P35-DS3L)

B: When I boot, I like the screen to hover on the initial screen for a moment so I can verify my CPU speed, RAM, Drives, etc. Well this computer immediately boots and I see the windows loading screen before I can do anything. Is there anyway to slow it down and hover for a minute?

Any other tips with this mobo/cpu?

As for your Ram, sorry, not familier with that board.
