I'm receiving a eVGA and an XFX 7800 GT SLI. Will they both work correctly together in SLI mode?

Yes (provided you use the latest Nvidia drivers)

How are you going to put them in that AGP motherboard?

Also, do I need a special bridging unit to run them in SLI or is everythine necessary included?

Hmorphone, I have an eVGA 133-K8-NF41-AX SLI lying around that I'm gonna use. Do you know if it's a decent mobo or not?

You should use the SLI bridge that comes with that motherboard to hook them together. You can run them without it with the newer Nvidia drivers but I believe you'll take about a 20% performance hit. That eVGA motherboard looks like a pretty good one and you ought to be happy with it.
