Could I combine two of these for a total of 12GB?

Yeap,

They only sell them in kits of 3 because they're marketing them for tri-channel i7 motherboard builds. You could also just use two of the sticks and you wouldn't know the difference on another board. It's just DDR3 1600 ram. 3 sticks is optimal for i7 use (tri-channel). Every other DDR3 board (like AMD) uses dual channel, so 2 sticks, 4 sticks, etc. You can double, triple, quadruple them up. Doesn't matter.

Very best, :)

So it would be triple channel with 12GB then? I have an i7 / 1366 mobo.

Correct.

I hope you do a lot of heavy application use though (photoshop, editing, flash, design, etc). Because memory usage over 4Gb really is not going to happen unless you completely turn off virtual memory (page/swap file). If you do that, then you can certainly use up all that RAM. But you also run the risk of course of a lot of memory dumps and crashes.

Very best, :)

Yeah, it would be 64 bit Windows 7. However, I looked around some yesterday at benchmarks with games, and apparently there's no difference from 3 to 6 to 12 GB of memory on any game, so I'll just stick with 6.

"Gaming"... That's what you're looking at 12GB's of memory for? Close to $500 worth of memory for "Gaming"?

You've at least got $500 worth of video card... right?

Well, I have $0 worth of video card because I'm waiting for nvidia to release theirs before I make my decision. But I would have around a $1200 budget for graphics cards alone. Would the 12GB be useful for programs like 3D Max or Maya?

It would be more useful for Virtual Machines (VMWare, etc...)
