Colorado in the winter - no skiing - need ideas.

Going to be driving out to colorado from nebraska in early January. We (GF and I) are trying to think of somewhere nice to visit with lots to do.

Does anyone have any ideas ? Any good out of the way towns that are worth a visit?

We also don't mind staying in near ski resort towns, we just won't be skiing.

However, we wouldn't mind going to a different region, such as the front range, north of denver.
