What do you do when you only have 5 more classes to graduate, but 4 of the classes you need are not being given? Not during this current semester and not in the spring semester? Anyone had this situation before?

Well, you avoid the situation all together by taking the classes rarely offered when they are available. Most schools tell you what classes are offered in each semesters in at least a year in advance.
Also, advisors can often substitute a class, especially if there is a time conflict, or if its not that important.
The school wants you to graduate just as much as you do, especially if its a public school.
