All 3 take some time to get good at
In a sense it is simple in that you only have a few units to build with no resource gathering in effect but WIC relies on great communication with your team, and is largely about co-ordination of attacks and defence since each player is really limited in his individual role. You can be infantry (for capturing the "waypoints"), tank (for main offensive), support (artillery + anti-air) or air.
In COH you can rely more on one player if you want, but the idea is to capture points that feed resources over time and secure them while quickly moving on to the next one. It has far more units with multiple upgrades compare to WIC and each unit is generally quite specialised. In COH both sides are quite similar to manage (axis and allies) but COH OF gives 2 new "faction" choices, which makes the learning curve slightly harder IMO.
I probably havent answered your question all that well  WIC is easier to get into to - but your not going to become that much better overnight (more balanced LAN games if you want to think of it that way). COH (espcially COH OF) is a quite a bit more difficult to effectively utilize your ability/units and the game might not be as intense or fun as you would have expected.
All of this is my opinion of course
