Closing a program remotely to do a backup of data.

I'm setting up a fileserver for a business, basically it's going to do the following things:

Save images/layouts from one computer
Save QuickBook DB from another <-- Windows 98 machine
Save Outlook 2000 PST from another <-- Windows 2000 machine

#1 is easy, simple copy
#2 & #3 need the programs to be closed to do the backup. How can I close the programs over the network?
