These people are human. Humans are easy to upset when worn down, stressed, and tired, all the while having to ACT like they aren't because there are demands from others to get things done, which in terms of film, means perfect acting as per the director and others. Demanding, exhausting, and stressful.
I haven't listened to the clip (have read some things on it), but I don't care what is said in it. I can almost guarantee in a similar situation I'd probably flip too. In fact I have.

Verbal tirades from successful high level crew (directors/producers/etc) and actors isn't at all uncommon in the industry. What is on the clip is fairly tame in comparison to some of the shit that goes down on sets or in studio offices.
These people (for the most part) really do live in their own world, one what we would hardly recognize. Pretty much nobody in the industry is willing to tell these people "no" in any circumstance due to the $ factor. That kind of empowerment leads to stuff like the clip being considered common and generally acceptable.
