What chocolate should I use? I've read to mix white and dark chocolate chips, or to add vegetable shortening to semi-sweet chocolate chips, and other ways.

Are you trying to get a certain consistency or flavor/look?
If consistency, use the vegetable oil, add a little till you get the right consistency
If look/taste, use whatever you want

I don't get the mixing white and dark. Why would you need to?

If you just want to cover pineapple in chocolate, get a double boiler, melt it, then dip the pineapple in

Or,
Are you putting it into a fondue pot (aka, chocolate fountain)?
If so, use vegetable oil

Just to cover in chocolate, whatever tastes the best. I was leaning towards dark chocolate since the pineapple will probably already be so sweet. But I know the person I am making it for doesn't like dark chocolate much. Not sure what the deal with mixing it was - I think they were trying to make it look pretty.
