I hate that they believe eating pig-brain soup will make you smarter.

Those Chinese tonic soups were awful and is the main reason why I usually avoid soups as an adult now -- even though most American soups are actually quite good.

that is the marrow, and it is delicious and nutritious

one way to extract this marrow is through making stock (as opposed to broth).

take your scrap bones (chicken, pork, beef, etc), roast them in the oven to get that nice flavor (maillard reaction), and then add these bones to a big pot. add in water, mixed aromatic herbs and vegetables (bay leaves, carrots, onions, peppers, celery), and simmer for hours on hours. when white foamy stuff collects on the surface, just skim it off. after a while, strain the fluid into a container and freeze it overnight. th enext day, skim and discard the fat that has collected at the surface.

now you have a good base for braising, making sauces, making soups, etc

Yep, my parent's were like that. "Eat the cow brains -- it will make you smarter!". Now with mad-cow disease, I wish I had never tried it when I was a kid.

We Chinese also have this concept of certain foods being "hot" and "cold". Like fried foods are "hot" and eating too much is not good (which is true). Apples are "cold". I think my parents consider peaches as "hot" which confuses me. I never fully understood this concept of "hot" and "cold" foods.

oh theres nothing wrong with that. eating boiling bones is always good. marrow is nutritious. and well, all soup stocks are made from boiling bones after all. soup stocks are in almost anything as well.

the strange chinese soups are the ones with medicinal herbs in them. these are not what you normally eat at chinese restaurants. they smell medicinal. some aren't bad tasting, but the health claims are dubious at best.


if you go to an asian mall there usually will be an asian apothecary with a ton of dried very expensive ingredients, from scallops to ginseng to weird stuff. some of this stuff ends up in soups.

Have you ever been to an American meat packing factory? We eat just as much weird crap.

I say that while I'm sitting in China though so take it with a grain of salt. :p

The Chinese seem to believe in a lot of medicine that we've long abandoned because it's based on superstition. The disturbing part is that "alternative medicine" and "eastern medicine" is so popular among Western neohippies and even regular people. Acupuncture is even covered by insurance in America.

Why don't you post the pictures of the bruises on your back from cupping? You know the Chinese actually believe the darkness of the spots indicates "congestion"? The Greeks left behind that superstitious pseudomedicine 2400 years ago. For most of the last 1000 years, China was far ahead of the West, and now acupuncturists and herbalists are considered doctors, even under the Communist regime.

If that is gross, just focus on Chinese vegetarian cuisine instead - I wish some of those restaurants opened up shop here in Denver. :(

UGH I am Chinese and my parents always made those crappy soups.

Damm I am not very fond of my own culture if this is the thing they believe.
