Chicken with plain rice

Just got a rice cooker! Love it.

I have some nice sticky rice on the keep warm setting a a chicken breast thawed.

What should I do with the chicken?

Dice the chicken and cook it in a pan with some olive oil.

Then get a sauce pan and melt 2 tbsp butter with 1 tbsp garlic powder or diced clove of garlic. Stir in 2 tbsp flour and cook 1 minute. Add 1 cup chicken broth and 1/2 cup milk. Heat and whisk continuously until thickened. Then add 1/2 cup of Parmesan cheese and salt and pepper to taste.

Cook some frozen veggies (carrots, green beans, broccoli, cauliflower, etc.) and put on top of the rice, with the diced chicken, and cover with sauce.

Mmm...mmm... bitch!!!

EDIT: Added flour! Forgot about that.

I am a noob cook. Would canola oil work fine?

put in a casarole dish with sliced red peppers, halfed mushrooms, brocolli, n a shallot (broken up or whatever like an onion). pour teriyaki over the whole thing (to taste), cover in foil, bake for... i dunno 30 mins maybe at 350. not sure on the time tho, check it at 30 n see if its done.

how about some nice chicken carpaccio? let it sit in the sun for a few hours for the flavors to develop.

What I do often is:

1) Get some aluminum foil, enough that you can completely wrap the and seal it up like a Hershey's Kiss

2) a) Put some kind of sauce on it. BBQ, Sweet/Sour, Teriyaki, whatever you got
or
b) Spice it: Salt, Pepper, Garlic at the very least. Sage, Crushed Red Pepper, Rosemary, Italian Seasoning, or other Spices can be used individually or in a combo with the previous sentences ingredients. You can also add some Balsamic/Red Wine vinegar or other Marinade with your Spices.
c) Optional: Onions, bell pepper, mushrooms, carrots, etc etc can also be added

3) Wrap the Foil up so that all the ends meet above the chicken making sure you seal it well(you don't need it to be air tight, just enough that the moisture will not boil over. I usually take all the ends and mash them together until flat, then I mash that perpendicularly until it's half flat)

4) Bake at 325F for approx 40 minutes

5) Take chicken out of Oven, open the top of the foil(reverse closing procedure) and put back in oven for approx 10 minutes.

I used to not do step 5, but the chicken comes out very Wet if you skip 5. Doing this creates tasty juice that you can pour onto your Rice, Pasta, or whatever.



Something I've started to do recently is to Pan Fry the chicken first before doing the above. Put some Flour(1-2 tbls per piece of chicken), Salt, Pepper, Garlic, Sage, and other Spices into a bag, drop piece of chicken into bag and shake until fully covered. Fry the chicken until golden brown. Then do the above using a Sauce. I've only done this with Sweet/Sour sauce and it turned out quite well, better than I've managed to before anyway. :D If you do this though, you only want to bake 15-20 minutes.

I cut up a small chick breast and seasoned it with salt, pepper, and some red peppers.

Stuck it in a pan with some veggie oil and pan cooked it.

Looked like this (it was absolutely delicious!).

Alright, I'm making that for tomorrow.

That or lasagna. But I'd end up eating too much lasagna, for sure. I always overeat pasta.

One time I made uhh four cups of rice cause I was hungry and ate just rice and some soy sauce, definitely didn't finish it though.

yech. When my sister was 11, every other day she'd only eat noodles and margarine. Pretty much the same thing.

I make for work everyday, 2 meals of plain rice, chicken breast,a nd mixed veggies, I don't pit anything on it, except maybe some Ms. Dash on the chicken

Very good, one thing though, if you're trying to eat healthier, dump the 'Vegetable' oil and use high quality Olive Oil instead. It will taste better, and better for you. More expensive, but damn it's worth it.

Would you say that meal is somewhat healthy for me if I use veggie oil?

Chicken cut into 2" chunks
soy sauce
salt
sugar

high heat, plenty of oil
brown garlic and ginger a little
add in chicken, stir fry
stir in soy sauce, salt, basil and sugar
make sure chicken is cooked through

plate and serve

It will work, but olive oil is a little better for you and you don't need to use as much since it tastes better.

Also, if you try my recipe make sure to see the edit in which I added flour. Forgot about that when I typed it up.

My wife and I ate this 2 nights ago and it was healthy, cheap, and, best of all, tasted great.

i really want to try the singapor chicken rice dish that bourdain had when he was there. i did a bunch of internet searching but found that even in NYC it's tough to find something that is as good.
