why do many chicken food keep the skin on?

for example, fried chicken from KFC's or buffalo wings. why not peel the skin off, then put the spices directly on the meat and cook the chicken?

Because, it is, what it is. Chicken is better cooked with the skin on. It keeps it moist and seals in the natural flavors. I've had chicken that was cooked skinless, and I just didn't like it as well. I do not eat the skin.

i know the crispy skin tastes good but sometimes there's just too much fat on the skin... not too healthy for ya.

eat the skin because its delicious

or take it off and eat just the meat to save calroies and....well, i guess arteries or something 😉
