Chicken Recipes?

I have a bunch of drumsticks and breasts that I need to cook. I wanted to do something a little different this time...beyond just bbq or fried.


Does anyone have any tasty suggestions?

Some years ago, as Frank Perdue was expanding into Puerto Rico, he had his ad agency translate his slogan, "It takes a tough man to make a tender chicken" into Spanish.

Apparently, it came out hilariously obscene!

So . . . you know how I like my bird. ;)

Full bird, patted dry then injected with Cajun Injector Creole Butter flavoring. Outside covered in seasoning salt. Then into a 450 degree oven for 45 minutes, then lower heat to 375 until fully cooked, usually another 45min-1hr.

Mmmm...

I searched online last weekend and found a Panda Food Orange Chicken recipe. It took me about an hour and a half to put it all together, and I was amazed that what I made looked like the Panda Food Orange Chicken.

The problem was that it didn't taste like Panda Food Orange Chicken. It wasn't bad, and I've eaten it for three nights in a row now, but it wasn't as good as the Panda Food Orange Chicken and my oil wasn't hot enough so my chicken wasn't crispy enough.

Maybe you could invent a Panda Food Orange Chicken recipe and I can try your out to see if it's closer to the real thing than what I made?

I mostly just like typing Panda Food Orange Chicken.

The cajun creole butter injector stuff rocks. Try it in a deep fried turkey...omg, it's unholy good.

I have never attempted to make orange chicken, but Trader Joes sales a pretty tasty frozen version.

when I'm in a rush, I just season boneless skinless chicken (breasts or thighs) with some cajun seasonings, lemon pepper, and red pepper.

Is that chicken or a delivery mechanism for butter and salt? :)

Seriously, though, if you're going to roast a bird, that's a good base.

season and cook chicken breast in a skillet, when it is almost done put some cheese on it to melt, then add salsa on that just before you take it out of the pan. add a veggie and its a good meal.

Throw a bunch of legs/thighs in a slow cooker, pour about a cup of Italian dressing over it and sprinkle some poultry seasoning on top. Cover and cook on low for 6-8 hours.

I purchased some marinade called "Stubb's Marinade for Chicken."

It's on sale at Meijer's every so often for $2/bottle.

I let it Marinade for about 45 minutes, then cook the chicken with a little butter in a pan. I make sure to put the rest of the marinade in with it. It's one of the more flavorful marinades I've ever purchased.

The owner of our favorite Mexican restaurant kept trying to get me to try one of his many chicken dishes. I kept declining and saying no thanks...finally, I had to tell him:

"No pinche pollo, por favor."

He stopped asking...

It's odd. I used to like chicken when I was a kid, but over the years, my work took me into several chicken farms and processing plants. I don't eat the stuff anymore...

That could do it. There's a chicken processing plant ~20 miles from here. The individual chickens, in the cages that are stacked 15 high, sometimes fall off the flatbed truck going to the plant. They look like eloi from "the time machine" and can hardly walk.

You can go ahead and give the breast meat to the dog or your kids so you don't have to worry about eating that crap. Next time the correct part of the chicken to buy is thighs, drumsticks or leg quarters.

As for how to prepare the legs you're going to want to make a basic chutney, add a cup of yogurt and a teaspoon of vinegar to the chutney and marinate the chicken overnight. Bake the chicken in a foil tent the next day. Boom.

heat oven to 400 salt & pepper 4-5 chicken breasts, spread pesto in 9X13 pan, add chicken, pesto the shit out of the top of the chicken. cover w/foil and bake 20-25 minutes, see if they're done. add a shit ton of mozerella and cook about 5 more minutes uncovered. better than the cum of god.
