Chicken Croquettes

These things are heavenly, but I can't find them any more.

I got hooked on these back when I worked in a kitchen and then I was buying frozen ones after I quit there, but they were still awesome. Weaver used to make them but My grocery stores carry very few Weaver products now and definitely don't carry the chicken croquettes.

Anyone know where to buy these (any brand is fine)? are they difficult to make yourself?

Can't imagine they are very hard to make. Aren't they just little fried/baked chicken nuggets with a special kind of breading?

Not really, no. The chicken is chopped in a food processor and mixed with a thick sauce and various other things like veggies and spices. That's rolled into balls, breaded and then deep fried. They're not complicated and it doesn't require any special cooking skills, but it does require a bit of time and effort.
