chicken breast recipes please

I am going to buy a chicken breast and will need a few recipes. Grilling, cooking on a skillet etc, or anything else. The simpler the better.

Let it soak in italian dressing for an hour, toss it on the grill. Add some pepper. Baste with a bit of garlic juice. :)

I usually buy boneless/skinless breasts on sale and put salt/peper/various spices on them. Then I put the breasts on the Foreman grill for about 8 minutes, very yummy.

1 tablespoon Paprika
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon sage
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
4 boneless skinless breast
1/2 tablespoon butter
1/2 teaspoon oil

Flatten the breast. Rub with spice mixture. Pan fry in butter an oil `7 minutes a side.................

You can also marinate it in lemon juice, garlic, and freshly ground black pepper. Then toss it on the grill. Keep any eye on it, though, because chicken breast is really lean and can dry out quickly if it is overcooked.

You can also cut it up into 1" chunks, toss it with corn starch, and then stir fry it with vegetables like squash.

Oooh. I'll have to try that with the lemon. And I have 10 lemons left over from making lemon cello. Awesome.

season one side with kosher salt and fresh ground black pepper. preheat the oven to 425F. put some olive oil in the frying pan (medium-high heat) and put the chicken in it with the seasoned side down (make sure the oil's hot first by flicking a little water from a wet hand into the pan). cut some large baby bella mushrooms and shallots in half and throw them around the chicken breast. put a sprig of rosemary over the chicken breast and squeeze a whole lemon over all of it (chicken, veggies, etc). after the chicken's been in the pan for about 2 minutes, put your head in the oven... jk, move the entire pan into the oven, chicken, shallots, mushrooms, and all. take it out after 20 mins. add a steamed green vegetable for the side, like broccoli or brussel sprouts. goes great with white zinfandel.

oh, make sure that if you use skinned chicken (skinned boneless = the best way to go with this dish), make sure that you scar the skin and the side you season is the skinned side. scarring = making a grid with your knife across the skin.... 4 lines one way, 4 lines 90 degrees from the first lines you made. make sure you have a sharp knife.

My mom used to put them in a glass baking dish, shake seasoned salt on them, cover with onions and bake until done.

1/2 cup of cooking oil
1 cup apple cider vinegar
1/8 cup salt (more if you like salt)

Mix it all together and heat a little to make sure the salt dissovles.

Apply this to breasts while grilling on low heat. Turn chicken every ten minutes and apply mixture. Grill for an hour and a half or until done.

A small spray bottle works best. I love it this way.

Brine it!

Brine is around 1/2c of salt (kosher salt is best- use a bit more if it is kosher though) in a gallon of water. Add a few tablespoons of sugar if you like. Soak the chicken for 6hrs to a day or so then take them out, season and grill, fry, broil, bake, whatever. The brining keeps them very moist.

One downside is that the leftovers are not nearly as moist- but that's the downfall of white meat.

Bowl of flour, bowl of fork beated egg yolk.

Dip the piece of chicken into the yolk then dip it into the flour until it sticks and it's completely covered. Then drop it into the deep fryer, remove it when the piece of chicken floats.

Marinade in lime juice and a shot or two of tequilla for about 2 hours. Grill & baste with the marinade while grilling.

On the side take a couple scoops of sour cream & a cup of salsa and blend them together. Take some tortilla chips, crunch them up, and make a bed of crumbs out of them. Throw the chicken boob on the crumbs, cover with the salsa sauce, and then put some diced tomatoes and green onions on it.

i just read this one in a magazine:

1/2 cup mayo
mixed with
1/4 cup grated parmesan cheese

spread mixture on boneless, skinless chicken breasts then sprinkle on some italian bread crumbs.

cook @ 425degrees for 20 mins.

Or as was mentioned, marinade in italian dressing, grill it, and about 5 minutes before it is done, put a couple thin cut slices of ham and a slice of provalone on there and grill for a few extra minutes.

Fancy and easy:

- Cook your chicken in a pan to your taste
- Aside, thick-cut mushrooms in some oil + 1 minced garlic clove + a shot of Cognac (take care, it could (should) get on fire) and end it with heavy cream + salt /pepper. Let it cook on high fire to the first boil and it's ready to be generously poured on the chicken.

Eat this with potatoes (whatever the style) and enjoy.

This one is a smash hit around here with my family.


Take boneless, skinless chicken breasts and brown them in a skillet with olive oil until golden brown on each side. Use Jamacian Jerk seasoning. Then preheat your oven to 400 degrees. In a 13x9 baking dish place your chicken. Coat each piece with O'Charlies Honey Mustard(you can buy a jar at Wal-mart). Then apply precooked bacon on top of chicken, then top with tons of Montery jack and Cheddar shredded cheese. Pile it on heavy. Put in oven 15-20 minutes.
