Alton Brown is a joke. That's why he got his panties in a bunch, Bourdain struck a nerve because Alton knew he's one of the worst offenders.

Alton Brown is not a chef or a cook of any merit. He's never run or even worked in a restaurant, he's never made a living cooking, never been a cook for paying customers, never worked 12 hour days in a hot kitchen honing his skills, never needed to create meals for harsh critics where he didn't have unlimited takes to get it right. He's Rachel Ray only *slightly* less annoying.

Bourdain vs Brown is not chef vs chef, it's former chef vs TV personality. It might as well be Ryan Seacrest kvetching at Bourdain, he's got as much professional chef experience as Brown does.

Bourdain hasn't taught me a fucking thing, except that monkey testicle on a stick is tasty.

Bourdain is a bafoon. He's his own version of man vs food, the douche bag edition.

Never suggested otherwise. Despite being a buffoon Bourdain was a successful PROFESSIONAL chef. He's a graduate of the Culinary Institute of America and worked his way up the ladder from line cook to being a successful head chef and executive chef at some great restaurants. He's got the chops and he's earned his positions.

Alton is Kathy Lee Gifford with a spatula. He's not a cook or a chef, he reads lines in front of a camera. Alton's got the same culinary background as Howie Mandel except when Mandel gets in front of a camera to read someone elses words he gets higher ratings than Alton does.

Tune into Alton Brown's new show and you'll see what Bourdain is talking about. Good Eats was a fantastic show, Camp Cuthroat is drivel compared to that.

I gotta agree with Jodell. The current crop of "cooking competition shows" is horrible.

"Let's see what kind of food you can cook with this list of non-edible ingredients...then, to make it more fun for the viewers, we'll take away your cooking tools and make you use mechanic's tools instead."

Fuck that shit. I never cared for "Iron Chef," since they really aren't teaching the unwashed masses how to properly prepare a dish...but at least they used REAL food ingredients to prepare something edible.

However...I also agree that Anthony Bore-dain is a douchebag. Accomplished chef...perhaps, but a douchebag none the less.

Bourdain is a douche but he thoroughly owns that part of his personality, it's an integral part of his work.

Give me an honest asshole over a sellout any day. FWIW I was a big fan of Good Eats and don't find Brown's metamorphosis into a game show host commensurate with the skills he's long displayed.

To be honest is Bourdain really a douchebag? The 'anti-mainstream' persona is his shtick, but is he really a douche and an asshole? He seems genuinely appreciative of folks he comes across in his shows.

Yeah, its kinda ridiculous to compare the two, let alone say Brown is more of an authority on cooking based on their experience. And Bourdain's show was about travel and food around the world, not how to make eggs or boil water.

I've always liked him, and I've enjoyed both "Layovers" and "Parts Unknown," probably because they combine travel journalism with culinary tourism. It's a good combination for me. Other than those two shows, "Kitchen Nightmares" and whatever interesting food docus come along I don't watch much cooking TV, and I especially don't care for the "Iron Chef" type shows. I did watch one episode of "Good Eats" but the whole "science of food" thing turns me off.

As I stated back in 2010 on these forums......

ALTON BROWN IS A BLASPHEMER!!!!!

First off, I was born and raised in south Louisiana, I am a Cajun and I have over 10 years experience in food service here(to pay for college). I was a Chef at the local country club for over 7 years. Don&#8217;t get me wrong, most of what he says is based on factual information and I love his show. But as for shows on local cuisine, I do not trust all of what he states.

For example, the show entitled "Bowl O' Bayou" He mentions knowing the difference between "Cajun" and "Creole" cuisine. And he is somewhat correct on these assumptions. Ask a true Cajun if they put tomatoes in a gumbo and they will tell you absolutely not. It would be more of a "Creole" style gumbo.

The "Brick Roux" he uses is way to undercooked. Most Gumbos either Cajun or Creole use a MUCH darker roux than he used.

Another thing he said in this show is that,

"Now, no good gumbo is complete without a hearty sausage. Traditionally, of course, a Cajun sausage would be used. Some folks like a boudin, which is a sausage stuffed with seasoned pork and rice."

Now this is the most outlandish comment of the whole show. Boudin is pretty much a rice dressing in a casing. This would make no sense to put in a gumbo, it would just fall apart, and I do not think there is a person from Louisiana, Cajun or Creole, that has ever used boudin instead of some type of sausage.

Another thing he says is,

"Now I understand there are Cajuns out there who like their gumbo on potato salad. Me, I just like plain old rice."

FALSE, although based on fact. Many Cajuns server potato salad "WITH" their gumbo, either on the side or possibly in the same bowl, but never as a substitute for rice.


It is this "some what based on facts but not correct" show that makes me wonder about other cuisines that I do not have experience with... Did he just read a book and formulate his own ideas of what makes up different cuisines around the world?

And another thing, WHY DOES HE HAVE TO COMPLICATE EVERYTHING HE DOES IN THE KITCHEN!!!" You know if just using a butter knife to spread butter works, AWESOME! Don&#8217;t use a spatula tied to a cheese grater mounted to a 302 ford engine. He adds 10 unnecessary steps to every recipe.

And yes I know most ATOT are going to cry when someone talks bad about Alton, where is my flame suit......

From the article : In July, the &#8220;Parts Unknown&#8221; chef lashed out at food stars like Guy Fieri and Adam Richman for glorifying over consumption and reinforcing foreign stereotypes about Americans at a conference in Atlanta. Though Bourdain did not specifically mention Brown, he expressed general disdain for the some of the over-the-top food programming seen on television today.


I agree with Bourdain, Food network used to have good shows, now it's nothing but half baked cooking competitions.
