Cheese Dip

The mexican restaurant down the road makes the best cheese dip ever.

I can never get to make anything that tastes as close as theirs..and also have the same consistency/texture (not too gooey and not too thick either).

I don't have an queso dip recipes, but my wife occasionally makes the following:

1 pkg Velveeta
1 can Rotel Diced Tomatoes & Green Chilies

Cut the Velveeta into smallish cubes, drain the Rotel, put it all in a bowl, nuke it until it's completely melted, stir... enjoy!

I think this needs something more to jack up the hot/spice.

I'm never really fond of nuked Velveeta.

This, my wife always adds some spicy sausage, makes it sooo good.

Here's the best one ever, mine:
You use the amounts 1-1-1, so however big your crock pot is, you can figure out how much will fit in it.
Ingredients:
1lb Velveeta
1can Rotel tomatoes, white label
1lb Bass Farms Hot Sausage...MUST be Bass Farms for the proper taste.

Now, my crock pot is big, so here's how I make it:
2lbs Bass Farms Hot, 1lb Bass Farms Mild
Brown in pan. Chop it up while it's browning...basically almost like taco meat texture. Drain and set aside.
While you're browning, put 3lbs Velveeta in the crock pot and start it melting.
When it starts getting melted, add a couple of cans of the Rotel tomatoes. Total of 3.
When that's good and runny, add the sausage.
Cook it, stirring often, for a couple of hours...the cheese will get a bit darker, and most of the water from the tomatoes will evaporate.

Serve with Tostitos or nacho chips of choice.

This will be pretty spicy, but if you want it hotter, use all Hot sausage, and/or use the hotter Rotel tomatoes.

I make this a couple of times every holiday season. A few of my dealerships get pissed if I don't bring them some. When I quit the last one I worked at, they made me promise to bring them some every Christmas Eve like I did when I worked there.

Having a Christmas party this Saturday, there'll be some here...but it won't last.

If you have a smaller crock pot, 1/1/1 of each will probably fill it up. Don't worry if it's right up to the top at first...it'll cook down.

If Bass Farms sausage isn't available where you are, find a local brand that has a lot of sage in it. Breakfast-y type sausages don't taste right.

Bonus points if you burn some of the cheese on the side of the crock pot and stir it up into the rest.

Velveeta + Chili + hot sauces.

I like Chili Con Carne (no beans!) use beans if you like, I like spicy so I put a ton of hot sauce, like 4-5 different bottles. Basically whatever's in the fridge when I'm making it. Even if you don't like spicy, a bit of sauce can give it some flavor. This is my favorite dip, it goes well with beer and just is delicious to snack on whenever. I typically use a huge block of Velveeta and like 3 cans of chili so it makes a ton. Simple, and very hard to mess up, maybe impossible. If you like Onions and Tomatoes and stuff toss it all in. I like it plain myself.

I'd say it's very similar to the Queso dip @ Chili's, but better

wife found the chili's restaurant queso dip on the web......it actually came out good ie similar to the restaurant.
