Chat over LAN server/software

Our lab staff is split between a number of different rooms. So I'd like to install some chat software for everyone. We're a mixed environment: equal parts windows and linux (opensuse), one mac. I figure Pidgin is an easy client choice.

Any suggestions on (free) server software and/or protocol? I was looking at Jabber/XMPP. Any other suggestions? No file transfers or audio/video streaming is needed.

Mods, move wherever desired. Though software in nature, my issue is multi-platform so I thought it would be better served here.
 
Well, that didn't take me long.

A simple setup of openfire for XMPP. Pidgin on everyone's computer. 30 minutes and a bunch of buddy-adds later, we're rollin'.
