KT-300-HIP Ceramic Sashimi Knife (limited availability)

Kyocera has launched a new, custom-made, 8.25" single-edge ceramic sashimi knife. Hand-crafted in Japan, each ceramic knife is sintered at extreme temperatures in a sealed vacuum for over 24 hours at 20,000 tons of pressure. This pressurized-firing method increases the density of the blade, producing the highest grade of ceramic available. Following a multi-part process, the sashimi blade is then precision polished to a mirror-finish. The handles are created from a pakka wood in a traditional, octagonal design that provides a slip-resistant grip. A total of 500 ceramic knives are being made, 200 ceramic knives available for North America.

Too short ? It's a Sushi Knife :) it's not ment to go out and pull from your trench coat and be the only one :p

And it's actually a very nice price for a good knife. Not that the everyday person would buy one. If you cooked or are slicing very thin product on a day to day basis like at a sushi bar then yeah it's a great deal :) Personally I'm a German Knife fan myself or Swiss. I used a set of very nice norwegian <-- spelling .. boning knives last year and loved them but the price put me in sticker shock at $2700.00 for a three knife set and they didn't break them up.

Looks like it'd be a great knife until you drop it. Then you'd have a lot of great tiny knives. :)

Sintered Ceramic's have been around for a very long time. Given the pressure heat and time applied to the slurry or powder it can be extremely durable. I wouldn't take a hammer to it but dropping it should not kill it :)

Well if it is anything like my kyocera phone, it will probably just stop cutting sometimes for no reason at all.
