I catch A LOT of catfish out of Erie, but uhh, I'm scared to eat the stuff considering I fish for catfish within a half mile of a coal power plant, they're good sport, one catfish a cast , biggest one was probably in excess of 3 feet.

But yeah, I am lacking the uhh cornmeal stuff or whatever, and oil.

fried is good, but I prefer baked with herbs and butter and lemon in a tinfoil boat.

375 for 25 - 30 mins makes very tender catfish.
