Cast Iron Skillet - Steak Cooking time?

cast iron skillets rock!

if it were me I'd get skillet up nice and hot, slap in steak and sear it on both sides.....pour in some red wine, cover and simmer until done. :)

Pre-heat oven to 500 with the skillet in it.
Take skillet out and put it on HIGH on the stove for 3-5 minutes
30 seconds on steak side 1
30 seconds on steak side 2
2 minutes in the oven on steak side 1
2 minutes in the oven on steak side 2
Enjoy


for a 3/4" steak, this is pretty much medium rare. Estimate the oven times up or down depending on your cut.

make sure your skillet does not have a plastic handle.

time of cooking depends on thickness of steak.

nope. no plastic... all cast-iron.

tonight my cuts are pretty thin..... so i'm guessing i'll need alot less time.

do you suggest coating the pan with a thin layer of oil/pam while it's in the oven pre-heating, or only when it goes on the burners.

VIDEO INSTRUCTIONS
Rub olive oil on both sides of the steak.
Put a dry pan on a burner on high heat.
When the pan is really hot, drop in the steak for 30 seconds, then flip it for 30 seconds on the other side.
Then, put the pan and steak into a oven that has been pre-heated to 500F.
After 2 mins, flip the steak, and do another 2 mins.

You may need more or less time depending upon the fat content, thickness of the steak, and how well done you like your meat.

why not?

If you're getting your pan up to 500F (recommended) that plastic handle will melt. I don't know of any cast iron pans with plastic handles anyway.

Saw that exact same method demonstrated on TV on the Food Network. Tried it and found the steak to be too rare for my liking. This would probably work if the cuts of meat were smaller than 3/4 of a inch. By the way, if you don't flip it once more before you put it in the oven, one side will get cooked more than the other.
