Will the Antec Sonata and its stock 380W PSU suffice? Or, should I get a Lian Li PC6077 with a OCZ PowerStream 420W or ModStream 450W? (info in making decision - the ModStream is a few bucks cheaper than the PowerStream)

You'll be okay, but if you want, a Powerstream will extend you into the future and protect your investment more.

The Sonata and it's PSU will be fine but the Lian Li is much nicer looking case.

For PSU's OCZ's are good but not really worth the money in my opinion.

You'll be fine for quite a while. Upgrade the PSU when you need to. Since your case already comes with a PSU, upgrading a component now won't really save you any money in the long run, and there's no real benefit to running a more powerful PSU than you really need.
