I'm over the Lanboy Air that I've had for a year and a half, and I'm ready for something new.

Just pulled the trigger on a Corsair 800D, now I need to get some fans for it.

1) I can't seem to find out how many fans it can take total, so maybe somebody can help shed some light on that?

2) I will not be using water cooling. I'm going all air (for now). I do not want any lights, and I would like adjustable speed. Can anybody make some recommendations?

Edit: I do not have any optical drives.

What he said^

But the 800D can, stock, handle 3 140mm fans (comes with the case) and an additional 4 120mm fans.

800D can be a PITA to properly air cool with. The best setup I found was three 120mm on top pulling in air, the big 140mm on the bottom pulling in air and a 140 or 120 in the back as an exhaust.

Gentle Typhoons are my favorites and what I use. Quiet and decent performance.

That's the setup I was planning, only I was leaning towards Scythe Ultra Kaze fans with a fan controller. Now I just need to find a fan controller that matches the 800D.
