Carrot cake: best cake ever, now with twinkletoes' recipe

I broke down a little on my diet and decided to bake a cake. Only 20 more minutes till it come out of the oven. :D

I'll take the recipe. I just used some generic recipe that I searched for on google. I'm having a hard time not eating the cream cheese icing. :D

I love it too... in moderation. Much better than the more famous cheese cake.

Ingredients:
4 eggs
1 1/4 cups vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pecans

1/2 cup butter, softened
8 ounces cream cheese, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans

1 Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.

2 In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.

3 Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

4 To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.

(I actually cheat on occassion and use ready made cream cheese frosting)

Also you can cut the recipe in half and just use a square 8" pan, or keep it as is and make it in round pans.
Additional options: You can substitute half of the oil for applesauce.

Edit: Oh yeah.. and i dont mix the pecans in with the frosting.. i just use it as decoration after its frosted.. you could even grind up the pecans and pat the sides with them if you wanted to :)

the possibilities are endless.

If anyone is interested I also have a really easy and excellent pizza dough recipe as well.

Oh yea, i'm right outside chicago. There's two or three bakers square's within a couple miles of me :)

Just put it in the oven.

Looked gross in the batter stage. Picture bits of carrots and pecans sort of floating around in a thick tannish liquid.:disgust:

Waiting till the cake is baked before making the icing. I am prone to spreading the icing on too warm of a cake.:eek:

Turned out good.

Very good recipe TwinkleToes77.

Liked the copious pecan flavor and that it made plenty of icing.

I've eat two slices and had to chew a piece of gum so I would stop and not stuff myself.:)

hahaha nice.. im glad you liked it.. I baked on yesterday morning as well.
