It's so simple, cushion the impact. But the science behind it is pretty freaking cool. What they do is "round" out the deceleration to something the body can survive. The design of them is pretty amazing, from the sensors to the actual deployment of them is all dictated by basic physics.
While the foam filling car of that stallone movie (demolition man) was cool it's not going to do what the airbag does. Control deceleration to the body/head instead of letting your brain and internal organs deal with it.
