Capturing a website at a specific time

Hi. I'm writing a paper and need to collect data from specific webpages at specific times. Is there an application I can use to download or take an image of the contents of a URL at set times, so that I can go into the images later and extract the data I need?

Thanks for the suggestions, I looked them up. Anyone else have ideas? I showed them to my CS friend and he's not familiar with it. We might give it a try but if anyone else has ideas, I'd appreciate it.
 
Another challenge is that the sites include flash or java, so they're not specific URLs. I could access them earlier in the day and leave them up in a window, though.
