Can't get Yamaha RX-V373 to output audio from Roku

Hey all,

Wondering if anyone can help a noob with troubleshooting this setup. Here's how i have everything connected:

Video: Roku ----hdmi---> Yamaha RX-V373 ----hdmi---> Projector
Audio: Roku ----hdmi---> Yamaha RX-V373 ----Optical/RCA ---> Logitech Z906 5.1 (I know, I know...)

So there are a few issues here I didn't anticipate.

Questions:

1.) I want to split a standard HDMI Video/Audio signal from the Roku to separate devices (projector/logitech system), but the receiver only outputs audio via unpowered speakers/direct speaker wire OR RCA jacks. Apparently it does NOT output via optical. Is this correct? I assumed it would but the only optical jacks are INPUT. D'oh. I guess receivers aren't designed to ever output to powered systems?

2.) So as a test, i wanted to see if i could at least output via RCA (despite sacrificing 5.1). Only problem is, I have no idea how to tell the Yamaha to output audio separately via RCA. I looked through all the options and the instructions but couldn't figure out how to do that. Any idea?

3.) Since I already have the satellite speakers mounted on the ceiling, could i skip the subwoofer/amp unit of the Z906s and simply use the standard speaker wire to plug directly into the receiver? All i'd need then is to buy a separate component subwoofer. Would this work? I know the 906s aren't awesome in terms of music quality, but at the moment they were the cheapest option and I'm not enough of an audiophile to really know the difference.
