Can you eat rodents?

Our neighborhood is being overrun with mice, packrats, bunnies, and jackrabbits. I don't know what the deal is but lately we've had an explosion in the rodent population. So we plan to go hunt them but I was thinking maybe we shouldn't waste the meat. Anyone have any good recipes?

I am pretty sure you can eat it, however I'd make sure to cook anything wild to 165F. Personally I wouldn't want to eat a rat though. I could do a bunny or hare.
