Can wireless keyboard signal be intersected?

Many/most are encrypted, you'd have to look at the model specs.

Logitech's cordless desktop series, for example, is encrypted.

As for the range, it's possible someone on the direct opposite side of a wall MIGHT be able to pick something up.

BlueTooth certainly has a much, much higher range (and I believe encryption is part of the bluetooth standard).
