I'm wondering, because I have multiple computers can Windows XP Media Center Edition be installed more than once off of the same CD?

No, it's just like any other piece of software - you need a unique CD-Key for every PC you install it on.

It functions the same way XP does, so that alone answers your question, it's nothing special because it's MCE, just has additional software and hardware support. So, no, you won't be able to activate it on different machines.
