Hey there. I've got an Athlon XP 2100 now. Was considering maxing my board out with an Athlon XP 3000 333mhz model (it won't do the 400 mhz one).

Can someone quantify will this upgrade be worthwhile for gaming and video editing?

Nah, just motherboard and CPU, If he buys a MSI K8N NEO2 for example, together with an AMD64 3200+ E3 (Venice) He has a lethal amount of firepower 😉
