can i set projects to do this?

Depends on what project you are running, Rosetta for example lets you adjust the amount of time it spends on any given work unit.

cool, also, is there any way i can make it download alot of work units (like 10+) incase my internet connection goes? (it happens often in third world countries....*sigh*)

You can't really set the amount of WUs, but you can set the amount of days of work that BOINC should keep in cache. Just go to your project's web site > "your account" > "computing preference"s > look for "Computer is connected to the Internet about every" and enter the value of your choice.
