I left some frozen packaged salmon out, and it got warm. The fillets are sealed in their own plastic pouches, and the plastic pouches are in turn sealed in a bigger pouch. I don't know how long they were out, but it was more than 24 hours, and less than 48 hours. I put them back in the freezer to chill them, with the intention of throwing them out, but a friend of mine thought they might still be ok.

I'm not usually a Nancy when it comes to stuff like that, but I'm more careful with seafood. I don't want to waste the salmon, but I also don't want to spend a couple days puking my guts up.

What says ATOT?

Vacuum sealed? Safe.

Just tightly sealed? Probably still safe.

Just cook them well.

That's what I was thinking. If it was chicken or something, I'd just cook it to death. The problem with salmon though, is overcooked salmon is almost as bad as no salmon :^D

They're completely sealed, but not vacuumed. Just packaged, and sealed with a machine. Whatever air is in there, stays.

Like you say the problem with this is the length of time you'd need to cook them to feel comfortable with it.

Cooking bad food does not remove all of the harmful compounds that 'bad' bacteria create... it just kills the bacteria.

This too.

Bacteria can create toxic poisonous compounds that aren't destroyed by cooking and these toxins can give you a bad case of food poisoning.

Generally (and for legal reasons, don't quote me on this :p) if fish is at that point, it will stink.

I would feel okay cooking salted in oven in aluminum foil (and lemon... love lemon) and then measuring with thermometer. So long as it doesn't smell thawed out beforehand.

I say chuck it, although wasting food in any way hurts my soul having the possibility of a 2 day explosive diarrhea event just isn't worth it..
