Can i do some GPU mining with this build?

The CPUs will be working 90% capacity since i want to run 60+ VMs on them, can i get a couple more 7950 and use them for mining?

sure, why not? PSU size/quality will be a concern. And those 7950s will get pretty loud/hot if you cram them together with only the minimum space between them.

Otherwise, you'll need to strike a balance between how much GPU you have and how much CPU you allocate to keep it fed for mining. But you don't need much CPU, so...
