I originally installed Vista when I had an amd processor but recently switched to an intel. Would it be ok to delete the amd directories that are in the \Windows\Winsxs directory?

Why would you delete anything in the Windows directory, especially when you don't know what they are?

Winsxs is used to give older applications access to "known" files (like dll's) and the damned thing has grown to almost 6gig in size and my disk is almost out of space. I also can't extend the partition size because whenever I shrink the partition next to it it puts it at the end of the next partition instead of the front which means I can't grow my OS partition.

What do they have to do with then and yes I was assuming they were from when my machine was running an amd processor.

You do realize that Intel processors utilize AMD64 technology, right?

I'd backup, format, get your partitions right and go forward that way. Deleting stuff in system folders is so 90s.

Actually I hadn't realized that the Q6600 used amd64 tech. I figured it was worth at least asking but there is still some other locations I can move stuff (like images my wife hasn't touched in years).
