I'm thinking of building a raid system for the first time (either 0 or 0+1). Can i partition the raid 0 into several logical drives? Also, can i use the windows defragger on it? THanks.

Yes and yes. I have my RAID 5 array partitioned a few times for organizational purposes, and I defrag them as necessary.

RAID volumes look and function just like regular hard drives.

Note that RAID0 generally doesn't do much for normal desktop performance, and you'd be much better off in terms of reliability by using one drive to back up files/images from the other.
