I bought a big ass jug of it a while ago and have been using it bit by bit ever since.
I always thought that the peppers in it counteract any bacteria that may enter, so that it will never go bad, not at least for a long time.
Is this true?

Peppers have nothing to do with it. The vinegar is what helps prevent bacteria growth and to a lesser extent, garlic.

I have an ancient bottle that I never seem to remember when hot sauce is appropriate.

It's as delicious as the day it was bottled.

INGREDIENTS:
Aged Cayenne Red Peppers, Vinegar, Water, Salt and Garlic Powder

of that, what can go bad? just shake it up before using it.

Thats what I thought.
Still tastes ok, just wanted to make sure.
Just needed to double check on my common sense.

Yeah, there's so much vinegar in there, it'll stay good forever. The crud around the rim of the bottle however.....that's a different story.

Yeah, the vinegar will keep it forever. I keep mine in the fridge though, just as added protection.

This is the stuff I buy

depends on your definition of "bad."

I could see it going stale... I can't see it giving you food poisoning.

This post bumped a thread from 2009. I've removed the post, but PM'd the post to the OP of the thread. This spot is now just a place holder so you don't think Remobz was the person who necroed a 5 year old thread. -Admin DrPizza

2009 was a good year for hot sauce, the spicy pain of economic collapse blended with the salty tears of the newly unemployed, truly a year for connoisseurs of red hot misery.

If you still have that bottle after just over 4 years and it looks the same, it's probably still good. If, however, you bury it and dig it up a century from now, you might want to look more closely at it first.
